Ingredients:
- 2 cups mixed vegetables (carrots, bell peppers, zucchini, etc.), chopped

- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
- Preheat the oven to 220°C (425°F).
- In a large bowl, combine the chopped vegetables with minced garlic, olive oil, oregano, thyme, salt, and pepper.
- Spread the mixture on a baking sheet in a single layer.
