Lemon Olive Oil Cake
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup extra virgin olive oil
- 2 large eggs
- 1/2 cup milk
- Zest of 1 lemon
- 2 tablespoons lemon juice
- 1 1/2 teaspoons baking powder
- A pinch of salt
Instructions:
- Preheat the oven to 175°C (350°F). Grease and flour a cake pan.
- In a mixing bowl, whisk together the flour, baking powder, and salt.
- In another bowl, beat together the sugar and olive oil until smooth. Add the eggs one at a time, mixing well after each addition.
- Stir in the milk, lemon zest, and lemon juice.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared cake pan and bake for 30-35 minutes or until a toothpick inserted comes out clean. Let it cool before serving.
