Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, diced
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup feta cheese, crumbled
- 3 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions:
- In a pot, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until water is absorbed. Allow to cool.
- In a large bowl, combine cherry tomatoes, cucumber, red onion, olives, and feta.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Add the cooled quinoa to the vegetable mixture and drizzle with the dressing. Toss to combine and serve chilled or at room temperature.
